Chinese Chicken Salad

This recipe can be really easy if you buy everything pre-chopped and pre-cooked. Or you can put more time into it and do that yourself. Either way, this salad is refreshing and dee-lish for those hot days when all you want is a nice salad.

Chinese Chicken Salad

  • Bag of Coleslaw or head of cabbage or romaine, chopped (your preference)
  • 4 Green onions, sliced
  • 1 Carrot, grated
  • Sliced almonds (toasted adds more flavor)
  • Cooked, sliced chicken breast
  • Fried wonton strips or crumbled top ramen


  • ¼ cup of sesame oil and olive oil combined (sesame oil is very strong, add it to taste)
  • 3 T rice wine vinegar
  • 1 t salt
  • 1 T sugar
  • salt & pepper to taste

Toss together slaw or lettuce, green onions, carrot, almonds, chicken, and wonton strips or ramen. Combine dressing ingredients and toss enough into salad to coat nicely.

Notes:Some people like the slaw, some people like the romaine, its a taste preference. I have been buying those wonton strips that are sold in bags in the pre-made crouton section. Yummy! Sometimes I grill my own chicken breast, sometimes not. Other optional add-ins:snow peas, mandarin oranges, red bell pepper slices, etc.
