Easy and delicious to make; perfect for summertime tomatoes!
Crostinis with any topping are fun to make and delicious to eat! The caprese flavors (tomato, mozzarella, basil) are a favorite in our household so we enjoy this recipe! Of course, garden grown tomatoes are an added bonus to this dish. Enjoy!
Caprese with Proscuitto CrostiniBaguette1 package of proscuitto Fresh mozzarella, sliced thinly*Fresh tomatoes, sliced thinlyFresh basilGood quality extra virgin olive oil.
Preheat oven to 375 degrees. Slice baguette, on the diagonal, into 1/2″ slices to make the crostinis. Place on a baking sheet and brush with evoo. Season with salt and pepper. Roast in oven until light brown and crisp – approx 4-8minutes. Watch it carefully, it can burn easily! Remove from oven and set aside.
Lay a slice of proscuitto on each crostini. Add a slice of mozzarella. At this point you can place back in the oven for approx 2 minutes until cheese melts a little.** Remove from oven and add sliced tomatoes and a basil leaf on each crostini. Top with evoo and season with salt and pepper.
Serve immediately and enjoy!
*Fresh mozzarella is the type you buy in its own liquid. It is usually found with the specialty cheeses.
**You can also wait and place the crostinis back in the oven after you add the mozzarella, tomatoes, and basil and melt it all together. It’s a matter of preference. Some people prefer the whole crostini melted and the tomatoes warm. We prefer it with only the cheese melted and the tomatoes and basil fresh. Either way, it’s going to be delicious!
