Brownie Cookies with White Chocolate Chips

These cookies are easy to make with kids! They have the taste and texture of a brownie in a cute cookie presentation! Enjoy!

Brownie Cookies with White Chocolate Chips

  • ½ cup butter, cut into chunks
  • 1 bag (10 – 12 oz.) semi-sweet or bittersweet chocolate chips
  • 3 eggs1 cup + 2 T. sugar2 T. cocoa powder
  • 1 tsp. vanilla
  • ½ tsp. salt
  • ½ tsp. baking powder
  • ¾ cup flour
  • ½ cup white chocolate chips

Over a double boiler, melt butter and chocolate chips together, stirring until completely melted and smooth. You can also do this in a microwave using low power and melting in short increments. Let cool a bit.

Mix together eggs, cocoa powder, and sugar, beating 3-4 minutes on high. Add melted chocolate to egg mixture, and mix well.

Add vanilla, salt, and baking powder, and mix. Add flour and mix just until combined. Fold in white chocolate chips.

Drop spoonfuls onto a baking sheet, and bake at 350F for 10-12 minutes. *The batter will be runny (brownie-like).
