Ramens are trending right now and every restaurant has their own version. This is a quick, easy, but very tasty version that you can make at home! Best thing about it is that the ingredients are mostly pantry staples you probably already have at home, and the toppings can be whatever you have on hand. This recipe makes about 3-4 large bowls. Enjoy!

 

 

 

Ramen Noodle Soup

2 tablespoons sesame oil

1 small onion, diced

1 small roma tomato, diced

1 tablespoon ginger, grated or minced

5 cloves garlic, minced

1/2 teaspoon garlic powder

1/2 teaspoon celery salt

2 cups chicken or vegetable broth

4 cups chicken or vegetable broth

1 tablespoon soy sauce

3 packages ramen noodles

4 shitake mushrooms, sliced long

Sliced ham, cooked pork, cooked chicken, small shrimps, or cubed tofu

1/2 cup green onions, chopped

1/2 cup cilantro, chopped

Poached or soft-boiled eggs

Sriracha sauce & sesame oil to drizzle

Warm the sesame oil in a large stockpot over medium-heat (careful not to let it burn, it doesn't have a high smoking point). Add the onion and tomato and cook for 4 minutes, stirring occasionally. Add the ginger, garlic, and seasonings; cook for 2 minutes or until fragrant. Add 2 cups of broth and transfer mixture to a blender or food processor and pulse until smooth. Return mixture to the pot and add the remaining 4 cups broth.

Bring to a simmer; add soy sauce and simmer for 8-10 minutes. Taste and adjust seasoning as needed.

Have all the topping ingredients chopped and ready. You can heat up and soften the mushrooms and meats in a small pot of stock on the side. Poach or soft boil the eggs and stop cooking immediately by running cold water on them. Set all toppings aside. 


When you are ready to assemble and serve, add the ramen noodles to the finished broth and simmer for an additional 2 minutes, or until the noodles have softened. Add the scallions, stir to combine.


Remove pan from heat. Portion noodles into bowls and follow with ladles of hot soup. Finish by assembling topping ingredients. Drizzle sriracha and sesame oil on top. Enjoy!
